I was fucking around with Google Translate some more and it seems to depend on if Dragon is used as a noun or not. Although how else would you use it? I don’t know.

From my limited experience there doesn't always have to be logic behind it, he Katakana as said is usually used for western words.
Given Dragons have a history in both countries, and I assume the Dragons in DQ are often Western styled Dragons, set in a European style location, Is Possibly why use the Katakana over Kanji.
Though I may be very wrong

I’ve just discovered that there is a such a thing called snapping turtles and I like the idea of turtles about 37% less
